mini lemon cupcakes.
On the way out the door to San Francisco and I realize I have A TON of buttercream frosting left--what to do?! So....I made mini lemon cupcakes and they turned out amazingly! (I'm on a lucky streak!) Just uploading a couple pictures before I jump in the car! See you later!
red velvet mini cupcakes.
I have a new obsession with mini cupcakes... and I'm loving it! For our friend's party my friend Ayries and I decided to bring a sweet treat, mini red velvet cupcakes with buttercream frosting!
We are both a little different..... I'm very controlled and Ayries is crazy! But we had fun decorating cupcakes for Kyle and his party:)
They were delicious!

three chocolate mini-cupcakes with three ganaches and three butter cream frostings :)
Today Momma found mini chocolate cupcakes in the freezer, PERFECT for experimentation! I decided on one plan with three variations, a cupcake filled with ganache, topped with ganache, and frosted with a buttercream frosting.
I chose a standard chocolate cupcake with chocolate ganache and vanilla buttercream, a Mexican Chocolate ganache (ganache with vanilla and cinnamon) with cinnamon/vanilla buttercream, and an espresso ganache with an espresso/vanilla buttercream. They are bite-sized and beautiful! Yum!

maple french toast and bacon cupcakes & earl gray cupcakes.
So a friend mentioned to me that I should make breakfast cupcakes and I thought to myself, "wouldn't breakfast cupcakes just be muffins?". Just my luck, I stumbled across this recipe that proved that there is indeed such thing as a breakfast cupcake!
The cupcake is like one big, soft, round piece of french toast with a maple cream cheese frosting topped with bacon:)
I was so excited when the cupcakes came out beautifully shaped, light and golden brown!
I paired them with a light earl gray tea mini cupcake that hit the spot! It's fresh lemon earl grey buttercream frosting came out a bit on the watery-side due to the extra lemon juice I added (I love lemons!) but it tasted delicious none-the-less! So good!

all purpose flour
cake flour
vanilla pudding mix
baking powder
corn starch
cinnamon
fresh nutmeg
salt
butter
brown sugar

vanilla extract

maple syrup
half-and-half

lemon roll
This was my first lemon roll! The roll is made of a light, spongey lemon cake topped with powdered sugar. For experimentation's sake I filled the roll half with cream cheese frosting and half with lemon curd. Although it was my first time using a double boiler, the lemon curd turned out alright; but it soaked through the cake making it difficult to fold, transport, and thus made the roll less of a success. Though it was slightly deflated it created a rich, delectable dessert. Perhaps next time I will try applying both cream cheese frosting as a base layer followed by the lemon curd.
Although the shape of the roll wasn't picturesque, it was delicious and I will definitely be attempting another roll in the near future!
